View attachment 1551327 So, I have a tip for all my arthritis sufferers..... not actually chicken related but anything that reduces our work load is a good thing.
So I was having a couple good days..... I have been trying to improve my diet and on days when I feel bad, it is hard to eat healthy as I don’t feel like cooking. So in my good days I marinated chicken and cut up pork loin in a bunch of different flavors overnight. The next day I baked multiple pans of chicken and slow roasted the pork plain. Each different flavor of pork loin was wrapped in its own foil and then all were roasted in my slow cooker all day.
I then separated the meat into individual meal sized vacuum freezer bags and froze. I stocked the freezer with a ton of different frozen steam in the bag veggies. I put up nearly 30 meals of meat. Now, dinner is quick and easy! Put frozen meat in fridge in am.... warm it for dinner and steam up some veggies! I also bought some nice lean ham steaks ( just enough for dinner) they are precooked and only need to be warmed.
Last night we had a baked seeet potato, ham with pineapple chunks and steamed peas! Took all of 15 min to make a healthy dinner!!! What you see in the pic is grillmates citrus chicken, lime chicken, mustard chicken, BQ chicken, herb chicken!
I had to stop my prednisone and methotrexate due to a skin infection recently ( actually feel better off the meds). I have been having IBS symptoms and “unhealthy” foods have been making me very sick to my stomach.... MD apt made. I have decided to concentrate on healing my gut! Taking supplements and probiotics and eating a strict anti-inflammatory diet. So far it seems to be helping my arthritis!!! My pain levels are cut in half and my energy is up!
