Ken had a heart attack - Meal ideas needed now!!!!

I went to the store today and got Smart Balance, salmon, cod, ground turkey, lite salt, 1% milk, etc. And a BOATLOAD of fruit. He is not a veggie guy, so fruit it will have to be for snacks.

Someone tell me please - it IS trans fats I am looking to knock out of his diet right?

They told this man who refuses to eat anything but red meat to cut out all red meat. That ain't gonna happen. We compromised with more fish and ground turkey, but he is not gonna give up steak. Not til they are prying his gun out of his cold dead hand.
 
Shhh...you can cut ground beef with ground turkey if you season it well. It makes an awesome meat loaf as well.
Sat fats are harder to cut because, well, they taste good.
Can you get leaner cuts and serve smaller portions? Like skirt steak in fajitas?
Will he abide swapping a baked potato for a baked sweet potato?
There's an awesome turkey sausage out there too, and they make turkey brats and Italian sausage that just utterly rock. Husband eats those without complaint, and husband complains about anything that at one point had roots.

ETA by "cut" I mean start half and half and gradually diminish the beef as time goes by until it's mostly or all turkey.

LOL!!! That is the truth. The people that helped my dad really did help him. They gave him a sample diet/meal plan and he now knows what he can have and what he can't. Too bad people make food taste so darn good!!! Just think how many skinny people would be in this world if food just sucked!!!

Good luck getting your carnivore of a husband to eat anything that is good for him!!! It's a hard process, but you are worth it, he needs to hang around a little longer!!!
 
Debi, From the age of 40 to 51 I had four heart attacks and had 8 stents placed in different areas of my heart. 5 years ago I had a de-fribulator implanted in my chest and this time last summer I had a triple bypass (both the toughest and the most beneficial thing I have ever done) I cannot tell you how hard this last year has been but by the same token I feel better than I have in years ........ I am a stubborn Carnivore type too and once this stuff starts it continues unless there are some serious life changes. It's like the saying goes: Keep on doing what you are doing and you will keep getting what you are getting. It is hard to make changes in diet but it does work. Good Luck to you and Ken, I hope he is better soon. Randy
 
For dinner tonight we had salmon with a lemon dill coating on it. Mashed potatoes made with Smart Balance, and corn on the cob. Dessert is a low fat chocolate cake thing with strawberries and lite cool whip.
 
Good on you Debi! Eeeeeease into it, and as long as there is dessert it all seems special!

Please tell Ken I am happy to hear he doesn't have to have surgery at this point, and that if he doesn't behave, you have plenty of biddies to help you!

Go out and get the South Beach cookbook. There's even dessert in there!

Also look into Greek and African recipes. Those tend to be both tasty and healthy.

Will he eat lentils? There's a killer lentil soup recipe made with turkey sausage that's exceedingly tasty.

If Ken does not want to change his diet all your hard work will be for nothing cause it only takes 2 minutes to go through the McDonalds drive thru on the way to work.

My brother had 3 H/A before he was 35 cause he refused to change his diet and still to this day he drinks and smokes and will eat a steak everynight of the week... nothing we can do will change that. however with that said i would rather see him eat a PROPER portion of steak then a Big Mac


stir frys are always a good option too cause it seems like you are getting a lot of beef but really yr not... chicken is great too in a stir fry but fry in a LITTLE bit of olive oil or better yet in water!


so I guess what I am trying to say (and not doing a good job at it) make S-L-O-W changes so that he wont even know that he is making healthier food choices

read lables...
butter is better then a lot of the margarine out there so read labels.
trim the meats of fats
dont buy junk food (potato chips) cause if they are not in the house he cant eat them...
remember to allow for treats too most frozen desserts have lower fat and healthier options like frozen yoghurt
