I haven't had mincemeat pie in forever!! I love that stuff! You should save me some!

My specialty is cheesecake. It is the best ever, imo! I bet Jon would eat that! My mom used to make fudge that was the greatest! She would make white and dark. Didn't really care for the white, but the dark would give you a cavity just looking at it! Of course I never learned how to make it, guess I thought she would live forever

And of course none of my sisters or my SIL claim to have her cookbooks, so I can't even find it now. That peanut butter stuff sounds good. Might have to try that!

Peanut Butter Pie

1 container of Cool whip (regular size, I think it's a 16 oz container)
1 cup peanut butter
1 pkg cream cheese
"about" a pound of powdered sugar - I usually use a little less.
TBSP Vanilla
Pie Crust - Graham Cracker or some such (I prefer the shortbread crust, but chocolate cookie crust is good, too)

Mix very well the cream cheese and powdered sugar, then add in the peanut butter and mix some more. add the vanilla and fold in the cool whip. Pour into pie crust and cool for a couple of hours in the fridge. Can top with a few chocolate shavings, or a few crushed oreos if ya wish.

(you can use a hand mixer, for the first few steps, but not with the cool whip, but I usually just stir like a madwoman instead of dirtying up another dish I'd have to wash.)

Here is a recipe for Fantasy Fudge I found it in my Kraft Holiday Cookbook.

3 cups sugar
3/4 cup (1 1/2 sticks) Butter or Margarine
1 small can evaporated milk (about2/3 cup)
1 1/2 packages (12 Squares) Baker's Semi-Sweet Baking Chocolate Chopped
1 Jar (7 ounces) Jet-Puffed Marshmellow Creme
1 cup chopped walnuts
1 Teaspoon Vanilla

Line a 9 inch square pan with foil, with ends of foil extending over the sides of pan, set aside.

Place sugar, butter and evaporated milk in large heavy saucepan. Bring to a full rolling boil on medium heat, stiring constantly. Boil 4 minutes or until candy thermometer reaches 234 Degrees, stirring constantly to prevent scorching. Remove from heat.

Add chocolate and marshmellow creme, stir until completely melted, add walnuts and vanilla, mix well.

Pour immediately into prepared pan, spread to form even layer in pan. Let stand at room temperature 4 hours or until completely cooled, cut into 1 inch squares. Store in tightly covered container at room temperature.

Yes, that would be wonderful!! I will have money next month, but I really need to conserve it! I can just see me spending hundreds of $$ on christmas presents and food!!

Chocolate Substitutions

For one (1 ounce) square unsweetened chocolate
Substitute 3 tablespoons unsweetened cocoa and 1 tablespoon shortening
.

For one ounce semisweet chocolate
Substitute 3 tablespoons semisweet chocolate chips or 1 (1 ounce) square unsweetened chocolate and 1 tablespoon sugar.

For one cup (6 ounces) Semi-sweet chocolate
Substitute 6 tablespoons cocoa, 7 tablespoons sugar,1/4 cup shortening

For one bar (4 ounces) sweet baking chocolate
Substitute three tablespoons cocoa plus 4 1/2 tablespoons sugar, 2 2/3 tablespoons shortening

I think Fantasy Fudge is awsome by the way. Just thought I'd put in my 2Cents.

Now music: I can say I am very well rounded and will listen to anything except acid, some rap(but I like a lot of the rap), and the really hard head banging guitar breaking rock.
Lately my radio is set on a Christian Rock station but The Beatles plays continously in the CD player, we know almost all the words to the songs on that cd. I have to laugh when I imagine them sitting around, old time rockers as they are(to be polite and family oriented about it), and making up some of the songs on that cd. I can just picture it...Guy no. 1 "Hey man that sounds good lets use it." other guy "k...hehehe".

Okay so, tonight after we went to the store we drive back to the coop to lock the chickens up and on the way I tell Layne that it looks like snow is blowing in front of the street light across the field behind us. He says it may be steam and I'm like "yeah maybe"...Well, I no sooner parked and got out of the car to pick up my BTW Japs for our nightly ritual and it starts snowing on me...COOL. I should have Layne record our nightly rituals with the BTW Jap girls...It is too sweet. They wait for me every night to put them in the hatch.
Well, I start to gather the girls and this HUGE rat runs from their feeder...Oh not a rat but a POSSUM!! Hissed at me on the run. Quickly gather the girls put them in the hatch and lock up. So glad everything locks up in the big pen but now I'm worried about my ducks...Although they have been going in the plastic doghouse lately at night I'm afraid the possum might get hungry and find them.

Oh no!! Do you have any electric fence or traps or something to catch it or keep it out???
We have got rats like crazy in the barn! Will they kill chickens? Hope not!

Princess needs to loose her bed (aka- my rabbits HAY!!) She is getting too lazy if she is not keeping the rats away!!

That just reminded me Cindy, I was gonna give you some straw when you came over!! I'm sorry!! I'll get you some next time if you still need it!
