BTW - I now understand the term "tastes so good ya want to slap yer mama".

My mama never told me they make bacon any other way than the stuff you buy at the store. My mama never told me there is a thing called "dry cured bacon" and that it is so much better than regular salt brined bacon. She also didn't tell me that is the next best thing to sex on this entire planet.

makes me want to slap her for depriving me all those years.

What's dry cured bacon? We got some hogs we're going to be putting up in a month or two. How's it done?​

I need to find out how it's done, myself - I bought some at the store (it's harder to find than salt brined). I imagine it is done like a country ham as opposed to a regular salt brined ham.

It is soooo good, though - it doesn't shrink to nothing or curl up like a ribbon in the pan - it holds it's shape and almost all of it's size, too. And it tastes so much more Bacon-y than the other stuff.

I've had it peppered, too - if you like peppered bacon it is good on dry cured bacon, also.

even the "fat" parts on the dry cured bacon are good and crispy and not fatty tasting/textured at all.

I have a cow that needs slaughtered in the next couple months and no freezer!!!! Well, we have a 7 cu. freezer, but it holds the pig.
I need a freezer.....anyone have one for sale?

The wyandottes are big eaters!!! Wait until they get bigger, but they do slow down on eating around 6 months. i just spent $120 at the feed store and I hope it will last a week.
 
The folks at TSC just roll their eyes at me each week.... It seems I'm always in there getting something or other.... Last week was a medium week and it was only $143...

I have to buy dog food and some doggy vacs this week so that should be cheaper Oh yeah, I might need to throw in another grower crumbles for the piggies..... I also need some DE but that will be at Richardson's by the stock yard as that's the only place I found that carries it.... Those folks are sooo nice...

I have some Golden Laced Wayddys and they're not piggies like yours.... Hummmm are you sure you didn't throw me some giants???

I really love the babies running around.... I have to keep DD out of there or she'll let them all out.... she grabbed one of the younger Aracunas and was walking around petting her for half an hour.... I couldn't believe how tolerant the girl was to being handled....
 
Well, I just got two calves, and another one coming tonight - puts the bottle babies up to 7 once I get that other tonight. I think I'm gonna quit there for awhile

I got the gravel work done in the larger corral (without the stalls, but with the shed) so I put Ike and Tina in there. I figure they have a bigger shed (since there's two of them) and more space to play since they'll have to be seperate longer from the others.

I've gotten all of these babies within a week - I'm such a sucker for punishment

But how can I say no??? they are so adorable.

total cows I'll have by tonight is 20 - (that's including Camille and Mookie who get to stay). I definately need to get to work on that pasture. Hubby and Tony are out there right now mowing it down (it had gottenovergrown) so we can start laying posts and fencing.
