i want to get a really good knife for processing. i want it to hold an edge well & able to be sharpened easily. i'm looking for a knife that fits my hand well (a fair amount of arthritis). a smaller utility knife is my thought.
i am looking at a knife that is serrated. can a serrated knife be sharpened readily or do you have to do special things to it or take it somewhere for sharpening?

What part of processing do you want a serrated knife for? (I've never seen anyone use a serrated knife on _raw_ meat.)

I just got a couple of Victorinox knives, one with a flexible blade and one with a stiff blade. You might want to check them out -- the handles are a bit rough so they won't slip when wet, and you don't have to hold them so tightly.
