knives for slaughter

I found my knives to be a hinderance when processing birds this weekend.
I went to Bed Bath and Beyond, but was unable to find a boning knife for under $40. I looked online, and want someone's thoughts on these.

I've heard good stuffabout Chicago, and this is cheap. Not liking the plasticy handle too much, but probably better for cleanup.

I went to wallyworld by the fishing tackle dept and bought a rapala fillet knife for about $20.00 and it works great its made in finland and comes with a leather case it also says J.marttiini on the leather

I do not know for sure the quality of the ones you listed, I have had terrible luck with that brand (chicago cutlery)in the past.

they are great knifes the one for 20 is a bigger knife I have one of the 12.00 ones to they both work great even have real wood handles on them to
 
aahh.. so looking in the house section isn't the right move.

What about the knives I listed though?

and a sharpener? What kind and how often?

well now that you mention it the knifes that we were talking about come with a sharpener .The knifes that you listed look fine the first one looks almost like the one we are talking about only with a plastic handle which I dont relly care for thats my PO thou the second one looks kinda of to tall of a blade for me once again thats my PO you should buy what you like and are comfortable with if you get the rapala be very careful they are really sharp
 
Make sure that your knife is sharp before you begin. My knife was not as sharp as it should have been and thus why I had the Comical Adventures that I posted about. Depending on how many you're doing you may need to sharpen it in between. I sharpen 1-3 times when I skin a small animal.

Anybody use a meat cleaver?

I use a Buck hunting knife. Great for skinning.

wally world fillet knife (sharpen frequently) $20
3lb cleaver from a restaurant supply store $25

Those are the only two knives I really use. I have others but have found those are the only two I really need. The fillet knife works great for the intricate stuff and the cleaver is perfect for dispatching and removing wings, legs, thighs, feet, etc. Just but the cleaver between the joint and whop the top of the blade with your hand and poof! Separation success.
