They are on eastern time. I don't know how soon they'd go through, a lot of people take their birds the day before. Last spring I went about 10 am their time and they went through around 2 pm. But last fall there were at least twice as many as there were this past spring, so it's hard to say. The poultry part of the auction went until 56 pm EST last fall, and that was with 2 different auction rings going for at least 6 hours. They'd had only 1 going in the morning, and weren't even making a dent in the entries.
