Lard Icing....

also, lard used to be the number one used fat in US households. Nowaways, it doesn't even make the list at all. It's basically gone from our diet, but it is wonderful stuff and should be brought back! It makes the most gloriously flaky and tasty pie crusts, among many, many other uses.

I buy pork leaf fat and render the lard myself. It keeps forever in the fridge or freezer.

ooooh.... also duck fat and bison fat - those two make the most GLORIOUS french fries in the world.
 
my "go to" icing is:

8 ounces of cream cheese
1 stick of real butter (NEVER margarine)
1 teaspoon (more or less) real vanilla extract
about a pound of 10X sugar
a few drops of cream or milk if needed to bring it to spreading consistancy

cream the butter and cream cheese until smooth, add vanilla, add sugar, thin with cream if needed. for chocolate icing, add cocoa

*swoons* it's wonderful!

That is exactly how I make my creamcheese frosting that is a huge hit every time. The only thing I add, which is truly my secret weapon, is a pinch of salt - just a little bit. It makes a huge difference and really brings out the cream cheese flavor.

lard is just the best for everything..its really good when you take your cast iron skillet and fry up some potatoes and onions in lard! soo good.
it also makes the best pie crusts ever. i buy it by the bucketful!
