I don't know if adding a ridge vent and opening up the soffits will provide enough ventilation in the winter.

Let me add the caveat that it should work fine unless you stuff too many birds in there,
and/or mis-manage the poop and moisture

I'm planning on using deep litter method and poop boards... though I'm sure I need to educate myself more.

Poop equals moisture and ammonia in the air.
Open waterers can add humidity too.
Not sure if it freezes where you are, but more important in freezing temps.

Poop boards will help, especially with PDZ on them and sifted daily.
Deep litter(composting) or deep bedding(drying).
Gonna guess deep bedding, will help keep things dry.
