Layer chicks vs. meat chicks

I have read that people separate their layers from meats at about a week or so. Are these random birds that you pick out? and you have to have different coops? Do the meat birds never lay eggs? I apologize for my ignorance. I am just starting to research. I haven't started raising yet.
 
For the most part, when people refer to "meat" birds they are talking about "cornish x rocks" or "cornish" meat birds. The are fast growing meat birds that easily hit 8lbs at 8 weeks old. They have been selectively bred for incredible growth rates. These are the ones people talk about separating from their "layers" which are often pretty much any other bird.
