Laying has ceased

My barred rock, Penelope, just started laying this week. Her first egg was a medium sized egg, which I've heard is normal. Her second egg was laid in the morning, shortly after I had gone to work (I heard her, but couldn't be late for work), by the time I got home, the flock had eaten it, and since then, I have not heard a peep from her. Is it normal for them to have a 4 day or longer span between laying, or is she laying them while I'm at work and eating them?
What do I do?
 
Sometimes they are irregular when they first get started. Mine will frequently make the egg song with no egg having been laid at all. Did you see evidence of them having eaten one?

That makes sense... The second egg, they ate, I found a piece of the egg shell. Haven't found any such evidence of this occurring again. So my assumption is she hasn't laid since.
