I have read about leg color and I am a little lost. If I breed a Yellow legged hen like RIR to a Slate Legged Roo like an Ameraucana, Yellow legs would be impossible in F1, but could show up if F1 offspring were bred to a Yellow or willow legged mate right?

Yellow skin is recessive, so a rooster pure for white skin crossed to a hen with yellow skin should produce all white-skinned offspring, all carrying a copy of the yellow skin gene. In my experience, birds split for yellow skin like that often have a yellowish tinge to their skin when young, which fades once they're several months old, so bear that in mind with your chicks.

Crossing those yellow-skin-carrying birds back to a yellow or willow-shanked bird should produce about 50% yellow-skinned offspring and 50% white-skinned offspring carrying the yellow skin gene. So yes, your statement is correct. 🙂
