I'd do a little networking out in the surrounding country and see if you can joint process with someone else. You could share comradery and butchery and maybe make a friend or two!

Phoenixmama, What you have here, may be a very rare entrepreneurial opportunity for you. Since there are no processors in your area, you may be able to become one yourself. I have NO CLUE as to what it takes, but with the economy the way it is right now, I suspect more & more people are turning to home grown foods, as a less expensive way to feed their families.
