I blow most of the whites out, and then add water. Plug the holes with my fingers and shake as hard as I can to scramble it with the water.It's not overly difficult. Use a large needle, and tap it at the end of the shell. I usually make the one on the wide end a bit bigger, so the contents come out more easily. Also, once a hole is poked, stick that needle in there to break the yolk. Nothing gives you a headache like straining to blow a full yolk out of a tiny hole!

I got desperate. I've been hollowing out different colored eggs to maybe sell around Easter next year (was too slow this year) and I could only dow about 2 a day just forcing the yolk out.
