Tired but happy. Listening to the sound of my husband working on the lawnmower, and my children splashing in the pool. knowing with certainity that my ankles and legs are the same size. Feel the pulsing. But I've got 50 lbs of tomatoes stored away for later. One of the sweetest sounds is the popping of the lids after you've worked so hard. Actually, my fingers are still so tender...going to rub some aloe vera on them. Whew, wish there was some way to peel the tomatoes with the burn!

5:45 am awoke, had prayer and Bible reading time
6:15 am fed & watered chickens
6:25 am set the water to boil for the tomatoes (salsa today)
6:30 am started breakfast
7:00 am began peeling 1st batch of boiled tomatoes
and so my day began.

I'm now finished with the salsa. clean-up too!

Turned out well, uhmm my house smelt wonderful!
Oh, breakfast was fried eggs, biscuits, fresh tomatoes, juice and sweet milk.

I've got ironing waiting on me...along with many other chores, all by church time. So I best get off here, oh, here's a pic of the salsa in the process.

Makes me want to get busy, I used up my last jar of salsa the other day. And Esau's corn is to die for! I usually get some for eating, but don't put any up. The last couple of years its been green beans, tomatoes and pickled okra, and pickles. And of course then there's the muscadine jelly. I usually wait for the second run tomatoes, but yours sure are pretty! Where do you get your jalapenos, if that's what you use in your salsa? The store ones are so expensive, and our early garden got flooded out, so buy the time our jalapenos are ready, the tomatoes will be gone. Our garden is so far behind we don't know if it will make before it burns up! I just wanted you to know I really enjoy your posts, and even if you don't hear from me (and probably many other readers) we're here and enjoying!

Hi jenjscott- I had to push myself this week I can tell ya...and the week is 'really' fixin to get busy! Revival, and D-day for Angel Food is Sat....
I've been coming to get Esau's corn for over 10 years now. It is the best.
I had to buy mine (jalepeno's) at Mad Butcher, actually DH did...he bought 2 lbs. But I dearly love salsa. Our garden has babies, nothing to stick in the salsa. I also use banana peppers and bell peppers. I bought 2nd run tomatoes last year, canned some then too. Just didn't want to pass up the opportunity this year for 1st. Uhmmm, worth it. My house still smells divine.
I've been looking for big fields of okra....know of any? I've got 4 rows in my garden...but it's not producing yet.
Same about the cucumbers...mine got a blight before I could dust...so nothing

I got sidetracked while parboiling some tomatoes to skin and freeze. Now they taste burned. Do you think if i add enough hot pepper and oregano i can mask that burnt flavor?

I'm sorry I couldn't help sooner, but I would have been no help. Momma always threatened our lives if the tomatoes burned, and I can remember one time they kinda scorched, but not burned...she just scooped off the top...but it wasn't a big batch.
I'm sorry I not much help; I think burned...it is best just to start over. Thank you NCgirl!
Life is really busy lately, and I just can't be on here like I would like, your all dear friends. And I do love to chat with ya'll.
Well, got company...must go.
Have a lovely week-end...
