She's been avoiding all attempts to pick her up and won't let anyone touch her, although she has been eating, drinking, and pooping (albeit not very much).

When I approached her sitting, she stood up and ran away from me. A very sick chicken wouldn't have had the strength to do that, so that's a bit reassuring.
