Okay - I'm in search of a wonderful home-made cows milk/cream ice cream recipe. I dont want a custard as I dont care for custard really (we have a Kohrs Brothers here and they make their own custard ice cream.. I dont care for it at all). I want just simple, good ice cream; cream, sugar, milk, vanilla, chocolate or whatever flavorings, etc.

Creamy - yes.... icy - no.

Anyone got any good ones they'd care to share? Please??

I have a really easy one. It's simply 2 quarts of half and half, and 12oz of semi-sweet chocolate chips. Melt the chips in the half and half (I like to leave a bit of the chips as almost melted slivers). Put in ice cream maker container and chill before using ice cream maker.

I've tried others, this one is my favorite.

i used to make delicious ice cream whit milk cream egg yolk maple sirup and small chunk of hard maple sugar when i was in cooking school but i dont remember the recipe by heart sry

This is a very good recipe.

Premium Vanilla Ice Cream

Step #1:
2 tablespoons butter
1 cup sugar
a pinch of salt
2 cups heavy cream

Put all ingredients into a saucepan and whisk constantly until mixture comes almost to a boil; do not let it boil. Remove from heat.

Step #2:
2-1/2 tablespoons vanilla extract
2 whole jumbo eggs
3 jumbo egg yolks

Place eggs, yolks and vanilla in a blender. Turn blender on and blend for about 20 seconds or until mixture becomes light in color.

Slowly pour the very hot cream mixture into the eggs with the blender running until all the cream has been added...The cream will be hot enough to kill any bacteria that could be in the eggs. Blend for another 30 seconds or so and turn blender off.

Step #3:
1-1/2 cups milk

Pour cream/egg mixture into a covered container and add milk; stir well.

Place mixture in the refrigerator and let it chill and ripen overnight. The next day place mixture into ice cream freezer and make ice cream.

Spoon mixture into a freezer container and place in freezer to finish freezing.

All of the really creamy recipes seem to call for the custard. I have tried some with just cream and sugar, but they are always icy.
