I live in central Alabama, we are livestock friendly, the humidity is bad in the summer. Land is reasonable. I would choose TN if I could move there. It is very pretty and the weather is as good as anywhere. Our daughter lived there for 5 years in east TN, I loved the mountains, and the farms there.
I've traveled through most of the US and I would have to say TN, VA, or KY then NC. My preference if I were in your shoes would be TN then VA, then KY then NC in that order. I say take a little time and drive around the middle eastern US through the Appalachians along the Blue Ridge Parkway, compare taxes then decide. I love them all.

Let me know if/where you find a country farm style living. I have been looking at real estate online and i cannot find ANYTHING in NC that looks like it welcomes chickens. Kentucky has been the only place i have been feeling good about. Good Luck....I hope you have a great trip.
