I took 3 of the roosters that we processed out of the freezer last night. I am on my way home now to put them to cook to make cornbread dressing tomorrow. I know you all said to cook roosters low and slow. How low is low and how slow is slow? I need them to be tender and make a good stock. Simmer overnight or is that overdoing it? I don't want my family to laugh at us lol!

Yeah all night on a slow boil just enough to make the water churn a little, not a rolling boil. I got one going right now got the cornbread already done but we aren't having Thanksgiving dinner here till the weekend I just found out tonight. I'm gonna get a care package lunch for tomorrow from my sister then we will all get together this Sat. and do ours, we had a little set back here in the past couple of days.

I think so, this is my Jerezano cock. They come in different colors, I would like to get some white ones. Mature cocks usually way 3.5 to 4 lbs.

Well we got a sick Grandma now and she had to go in the hospital right now for some I/V antibiotics probly be in there for a spell she has to go do this ever so often due too UTI's . Puts a damper on regular scheduled activities around here as Mom is her care taker, thanks to all ya'll Mommas on Thanksgiving day for sure.
