Come back!
I want to know what a Spanish Jere-whatever is (in your signature line)! Jerezano.
It's a breed of gamefowl, Jerezano's originally from around the town of Jerez de la Frontera,

They make almost as many babbies as rabbits do!
I took 3 of the roosters that we processed out of the freezer last night. I am on my way home now to put them to cook to make cornbread dressing tomorrow. I know you all said to cook roosters low and slow. How low is low and how slow is slow? I need them to be tender and make a good stock. Simmer overnight or is that overdoing it? I don't want my family to laugh at us lol!
Thanks, Jeff! I hope your set back wasn't anything serious and you have a great Thanksgiving!Yeah all night on a slow boil just enough to make the water churn a little, not a rolling boil. I got one going right now got the cornbread already done but we aren't having Thanksgiving dinner here till the weekend I just found out tonight. I'm gonna get a care package lunch for tomorrow from my sister then we will all get together this Sat. and do ours, we had a little set back here in the past couple of days.
Jeff
