"Louisiana "La-yers" Peeps"

OK, all you "LURKERS" please jump in and join the conversation. I promise we are not nearly as scary as we sound. We all have a good sense on humor. Tell us about what you're cooking/baking for the holidays OR what brilliant thing you did today! I ALWAYS do at least ONE REALLY SMART thing a day!!!

Wow those are some absolutely gorgeous cakes!

Christmas is the one time of the year Mom & I don’t bake. We treat ourselves to cakes from Atwood’s Bakery. One coconut cake and one dobache (not sure how you spell it) cake.

Tonight I’m making broccoli cheese casserole for the office party tomorrow. I might do a batch of Southern pecan crescents this weekend & maybe some biscotti. Jim will make pizzelles in several different flavors. (Cookies don’t count as ‘baking’)!

Christmas dinner is traditionally prime rib roast, mushroom rice, mixed green salad, my last jar of pickled beets, rolls & the cakes. Appetizers will be deviled eggs and ham/asparagus rollups.

I can't believe I am going to say this. At this moment I am sick of baking!!! UGH!!! SiCK! I get a break though to go watch the Christmas program at my little ones school. That will cheer me up for sure! This mornings work. Triple layer chocolate cake with raspberry filling and covered in Chocolate Ganache. And a triple layer Carrot cake with Cream cheese icing.
Now I know why your daughter is into art. Beautiful !! But you have reminded me I need to get to work. thanks Pam

I guess since we are talking baking, I'll share a cake that I made on accident that had family members squabbling like starved dogs over a steak to get the last pieces of. No pics. though. I was trying to make something else, added too much butter which messed the taste up so said "Screw it. I'm not wasting these ingredients, I'm making a cake."

2 cups of coconut flakes
1/2 cup of butter
24 oz can of condensed milk
1/4 cup of crushed walnuts
1/4 cup of crushed almonds
1 cup of sugar
1 large egg
1 box of white cake mix
melted caramel

Mix it all together and bake at 350 for about 50 minutes. (I used a small square pan) Drizzle melted caramel on top.

I'll have to try that in the next few days. It sounds wonderful!

You guys make pizzelles?!??! My grandma always makes them!! Love them. I haven't made them in years! I sure do love to eat them when I visit her. She taught me how to make the anise flavored ones.

I gave Jim a pizzelle maker several years ago. We do the anise ones and also chocolate and raspberry and almond ones. Love a warm pizzelle!

Here's my show stopper dessert. When I make it my family wants to hide it from company . On occasion when company gets some they usually go back for thirds. I think its a happy accident it's gluten free.
Cherries on a cloud
Meringue shell heat oven to 275. Cover baking sheet with heavy brown paper. I use the inside of a shopping bag.
Beat 3 egg whites (1/3 to1/2 cups) and 1/4 teaspoon of cream of tarter until foamy. Beat in 3/4 cups of sugar, a tablespoon at a time; continue beating till stiff an glossy. DO not UNDERBEAT. On brown paper, shape meringue into 9in circle. I do a heart shape build sides up like a pie shell. Bake 1 1/2 hours turn off oven ; leane in oven with door closed 1 hour. Remove from oven; finish cooling away from draft. When ready to assemble gently pull paper away. Gently and slowly take your time.

Filling
1package 3 ounce cream cheese, softened
1/2 cup sugar
1/2 teaspoon vanilla
1 cup chilled whipping cream
1 cup mini marshmallows
Cherry topping,1 can cherry pie filling and 1 teaspoon lemon juice

Blend cream cheese sugar, and vanilla.
In chilled bowl, beat cream until stiff. Do not over beat you will have butter.
Gently fold whip cream and marshmallows into cream cheese mixture. Pile into shell. Cover chill at least 12 hours. Just before serving top with cherry topping.

Long story short (a Christmas miracle) I got a perfume sample made for me with essential oils. It was a certificate that was sent for my November birthday. It. Smells great! For you "soapers" it was patchouli (spelling?), lavender and vanilla. I keep smelling my wrist. Love the combo so far.

I just ordered patchouli I already have the rest. My favorite perfume fight now is victor& Rolf's flower boom. It has patchouli and florals I'm going to try and make a soap version with essential oils. Pam

So far I really like the combo. They mixed with an Aveda base called Chakra 6. However, just the three smelled great together. She did a a little heavier patchouli, then a little less lavender and the least amount of vanilla. I think I might be interested in playing with the amount of vanilla, as that is a scent I like and don't get headaches from.
