Made my first batch of goat cheese from my own goat milk!!

I loved this easy receipe that I got from my mom:

1 gal goats milk
4 tbl lemon juice
4 tbl white vin

2 tbl olive oil after it has drained
any spice (I used garlic, onion, rosemary, basil with a little salt)

Here's my question:

This is suppose to be Feta cheese. Feta usually has an after bite...

Mine is very tasty but extremely mild and you really taste the spice even though I didn't add a lot....

I tasted it prior to adding the spice and it was blah.....

I mean it tasted cheesey but not like Feta....

Is my Mom's receipe bad (wouldn't be the first time)??

It's a good recipe. It's usually called Queso Blanco though, not feta.

make it again and try putting sweet stuff in it, like pineapple and pecans. yum!!!
 
What is white vin? I'd love to try this recipe - I haven't made cheese yet from my goats milk but I'm ready to learn.
 
vin - vinegar

I was told to give it a bite like feta to use buttermilk....

That'll be next.....

I think sweet additions would have been wonderful for the mildness of this cheese.....
