Ash - yes if the dough stays out for long it is toast
I personally like the dough smooth but you can always add more salt or use a more coarse salt. I cant stand when the dough gets sticky. It can happen from overworking it. Sometimes mine gets like that toward the end of a batch at which point I toss it and start over. I cook my stuff on super low heat for a long time. It helps with the curling. Sometimes thin pieces will curl and warp in the oven no matter what you do.
