If you don't mind replanting regularly, our scarlet runner beans seem to do well. Or some kind of gourd or squash. But they will die back at the end of the season.
Remember that any lush vine is also a great home for rats. Not really want you want over your coop, of course if the whole thing is wrapped in hardware cloth you might be okay.
Personally, I would NEVER plant another bogus-villa (bougainvillea) ever again! The orange pink and hot pink ones we had take over and refuse to die! They have 1+" long spikes waiting to stab you and drop papery leaves all the time. Morning glories are pretty, but invasive.
Grapes would be good, but much of the year they are just vines-same with wisteria.
