If you do a search on BYC, you'll find a few threads of folks who were able to get a double yolker to hatch two chicks, but typically, one ends up dying...it will push against the other to pip/hatch, which kills #2. It's not a good idea to try to hatch them, as there's such a slim chance for them. I candle hatching eggs before shipping and will not include double yolkers.
But, the one thread in particular I'm thinking of, the OP did several videos of her having to help...very nerve wracking to watch, as she used one of those box cutter type things, but in HER case (the only one I know of), both chicks survived. In the thread, she chronicles their lives as they matured with many pics.
Interesting, but I don't know why anyone would want to do that.
Candeling is a very good idea for many reasons. If you ever have an egg explode in your incubator, I can guarantee you will candle your eggs from that time on
