So I FINALLY figured out how to get the humidity down. I have been working with this puzzle for 3 days now. I have a science background so it was driving me nuts that I could not solve this! Our family motto is "never give up". I tried the charcoal, didn't do much, I tried the salt/rice/baking soda, went up a little. So I thought I would try a dry sponge and it went UP 25%.


Then I realized the packaged sponges that come in individual packs from COSTCO are a little moist when you unwrap them, so must have been the moisture in the sponge. I cut up the sponge into 3 pieces and "toasted" them in the toaster oven to dry them out. This WORKED, I can't believe it! Humidity promptly dropped 20%. I will monitor for several hours and see how I can adjust the humidity based on how many of these "sponges toasts" I place. So I wanted to share this with you out there on the forum. I am sure I am not the first person who has thought of this, but I am so excited it works. I cut up several more sponges and toasted them and put them in airtight containers, so they do not soak up the moisture in the air in the house and can switch them out with the ones in the incubator as needed.
