Mayonnaise

:/ aw :( well, the blender I was using really doesn't allow for drizzling...it's basically a cup, you add stuff to it, screw on the blade top, invert it into the base to blend....I guess i need to search for the stick blender :(
 
I have seen chef's on the food network use food processors/ blenders to make mayo. I personally use a stick blender but the others work. Oil must be drizzled in...and beat it longer as it will thicken up as you beat it but the oil has to be added in a slow stream.
 
I always use a blender to make the mayonnaise base for blue cheese dressing. The blender struggles a bit as the mayo gets thick and the blender doesn't want to move the top of it, so I have to stop and scrape.

I used the food processor the last time I tried mayonnaise and it worked, but I had to put everything but the oil in before the blades could move the ingredients. One egg yolk took up so little space that the blades went right over the top of it.

You'll have better luck if you whip the eggs for a bit to develop the lecithin before you start dribbling oil. Once the eggs have been whipped for a bit, they will emulsify with the oil better.

I'm making blue cheese dressing today and I think I will try using the food processor and see how it works. I'm a little nervous about changing anything from what works. It appears that some people can make mayonnaise easily and some people can't make it to save their lives. I'm in the camp of people that mayonnaise doesn't want to emulsify for, no matter how carefully I follow the directions. It's doubly frustrating because the blue cheese dressing always turns out perfect and I'm hopeless with mayonnaise, even though it is the same process.
 
That was interesting. The very same recipe made in the blender turns out really thick. When it was made in the food processor, it emulsified and tastes like it should, but it is a lot thinner.

A huge difference is that the recipe contains onion, garlic, and celery. When made in the blender, the veggies are liquefied. In the food processor, they are chopped micro-fine, but are still in small pieces, which give the dressing some texture.

Every time I've tried to make mayonnaise in the blender, it has failed. I did get mayonnaise to work with the food processor. I think I need to buy a stick blender.
 
holy bajeebus it works so much better with a stick blender!...problem is my mayo tastes too oily...does anyone have solutions for me? I used mustard powder, onion powder, and salt...I was out of lemon juice, so I used lime juice...

Probably used too much oil. I dont ever use the entire amount of oil recommended. I just use enough to make the right consistency. You might try using a lighter oil, too. I use safflower.
 
I made mayo today for the first time ever. Used 3 coddled eggs, 2 cups of corn oil, salt, pepper and white wine vinegar. Looks and tastes great!
