Meat Loaf

I usually put in an envelope of dry onion soup. I use that to flavor a lot of things. Sometimes I add ketchup, too. And ketchup on top is so awesome!

meat loaf is one of those things I really don't like and therefore never cook. However my son loves it and orders it in fine restaurants, his favorite is a blend of ground beef and lamb with italian style herbs.

I add rolled oats to the meat to make it go further. The oats absorb excess liquid and you can't even taste them by the time its cooked. This almost halves the cost of the meatloaf and also makes it healthier, in my opinion. Like others, I also add eggs, onion soup powder and ketchup or tomato sauce.
 
I do the same as HEChicken but add a dash of worchestershire sauce. I also slice bell peppers and onions and put them in the pan and put meatloaf on top, my DH doesn't like either one but likes the flavors that it gives the meatloaf.
 
I follow my grandmas recipe....

ground beef and pork sausage
dry mustard
celery salt
dry oatmeal
2 eggs
worcestershire sauce
onion
salt/pepper
bay leaf

I add 2 beef OXO cubes < like stock cubes?> crumbled in, make a slice in the top of the loaf and put in the bayleaves and cook in oven till done. Then I wrap it in foil for a few mins to rest, and I take the dripings and make a gravy with butter/flour roux. Turns out great every time !
 
I use half ground chuck and half ground turkey to make it lighter. Eggs for sure, oatmeal is cheaper than bread. Tomato soup or ketchup in the mix and on top, onions, herbs, whatever I have on hand!

I'd LOVE to have the cornbread recipe! Sounds yummy to me!

I just mix in a jar of chunky Salsa to about 3 lbs of meat and cook for about an hour at 350-375 degrees and then ketchup on top for another 20 mins or so so that the ketchup gets darkened and sticky. It is a pretty good meatloaf. And Easy.....
