What are Finnish pancakes? Recipe please! Sounds delicious!

Finnish pancakes are a baked version. My sister was a teacher in the U.P. When she started making these.
Original recipe makes 1 9x13-inch baking panChange Servings
3 eggs
1/2 cup white sugar
1 teaspoon salt
2 cups milk
1 1/4 cups all-purpose flour
1/4 cup butter
Check All Add to Shopping List
Directions

Preheat oven to 450 degrees F (230 degrees C)
In a medium bowl stir together sugar, flour, and salt. Add eggs and milk. Beat with an electric mixer until blended. Batter will be very thin. Melt butter in the baking pan. Turn the pan to be sure all of the sides are coated then stir the remaining butter into the batter.
Pour batter into the baking pan and bake for 30 minutes. It will puff up when baking, and flatten when cool.Cut into squares and serve.

I have to make 2 pans to feed my 3 boys. I've used soy milk in place of dairy milk and it tastes fine.

I am repeating an entry I made just before the storm because no one replied since we were all preoccupied with the bad weather....

Just thinking about worming. If anyone coming to CS has plans to worm please keep eggs for me. You won't be able to eat or breed from them, right? They'll just be tossed? PM me. Unwashed and refrig'd they should keep fine until CS.

If I'm wrong about this someone correct me, please. Thx.

This is what I make when I have lots of extra eggs. The recipe makes 2, so you can eat one & place the other in the freezer (we never let it get that far. In fact, when I have company over we double the recipe to make 4 pies.) If you're one that likes shellfish... This recipe is AWESOME & takes LOTS of eggs. Here is the original recipe, plus all my notes I've added. My whole family (& friends) love it.

Crab Quiche

(2) 9-inch pie shells
1 egg white
8 ounces crab meat
(I used imitation & it was fine… and added extra of course)
4-6 strips of bacon (only 4-6? HA! Not nearly enough bacon, use at least a whole package.)
½ cup diced onion
1 ½ cups milk
8 eggs
(I use a whole dozen, with my larger pie dishes)
½ teaspoon salt
1/8 teaspoon pepper
1 teaspoon lemon juice
1 cup grated Swiss cheese
(not nearly enough cheese here either. LOL)
2 teaspoons freeze-dried chives
1/8 teaspoon paprika
1 lemon, sliced…
(stupid IMO, since this is a garnish… I nixed it)

Preheat oven to 350. Beat egg white until foamy; brush pie crusts with beaten egg white. Prick bottom and sides of crust; bake for 5 minutes and cool. Pick through crab 3 times to remove all shell (or use imitation). Divide crab evenly and place half in the bottom of each pie crust. Saute bacon until golden brown. Removed bacon, drain and crumble; place on top of crab. Saute onion in bacon grease until soft; drain and distribute over crab. Beat milk, egg, salt, pepper and lemon juice. Pour over crab; top with cheese. Sprinkle with chives and paprika. Place on cookie sheet and bake 35 minutes. Serve hot. Serves 3-6. Serve with sliced lemon and a spinach salad!

Frozen quiche may be baked while still frozen but will require extra baking time.

Now, the recipe specifies: Do not use deep-dish pie crusts. However,when I've made this I used deep dishes (I think) because I added extra crab, bacon, eggs, and cheese. At least I think my larger pie pans are considered "deep dish". I had to cook it for longer than the 35 minutes (more like 50-55 minutes). Just slip a butter knife in the center to make sure the egg is cooked, like you would for a pumpkin pie.

This is a good recipe for Lent if you omit the bacon. I’m sure it will still taste ok without the bacon… but Lent would be the ONLY good reason to leave it out. IMO. Haha...

RaZ, I work for an insurance agency (in a different department though, I'm not an agent or claims manager and have not been trained in either area, but I've picked up a few things over the years). If you have an active current policy, and this type of damage or circumstances are not excluded on it, then they should have to honor your claim. Talk to your agent more & have them go to the mat for you with the company. Some companies can be sticklers though. However, just because they choose not to renew your future policy, doesn't mean they don't have to honor a current one unless they had already ended your contract prior to the damage. ...Just my thoughts.

glambka, I saw your post hun, just wasn't sure if I'd be worming my flock between now & CS or not. Your eggs are very nice though. Yes, any eggs collected at this point unwashed & in the fridge should still be fine by CS. All I have at the moment are standard issue chicken... shades of browns & blues/greens. If I have extras I will bring them to CS for you.

Ok, here is some freakish chicken laying!

This egg was collected by my friend yesterday. She put it next to some standard store bought eggs for comparison. This egg is from one of her old (probably 3 years old) MEAT bird. A few years ago, they got some chicks - expecting leghorns, but ended up with some Cornish Cross. Well this one hen is left from that batch... and this is what she laid yesterday. My friend said she's probably trying really hard to stay out of freezer camp. LOL. This egg is crazy.

But I thought I would stop by and see if anyone in the GR area has any large fowl hatching eggs available? My BO hen has been playing at broody for the past few weeks and she finally decided to sit on the nest day and night so I'd like her to hatch out some chicks. We do have fertile eggs, but it'd be nice if I could find a breed we dont have (olive eggers, marans, ducks - can she hatch ducklings?).
