I had my first duck this weekend. It was a Silver Appleyard dressed at 4.1 lbs.

We used the fat to rost the potatos in and still had some leftover for the larding of future food items.

I'm completely and utterly satisfied with how they looked and tasted. You have some good eating ahead of you.

I have 3 weeks to finish my ducks! We are looking forward to them. Peking duck with plum sauce ... mmmm

So far, we've just been roasting them and eating the delicious skin.

How were the chickens?

I'll have beef Friday. I actually had beef last Friday, but we were up at 4 am baking quiches for the farm market. I sold 30 quiches and 50 cornish pasties. It was a big day.

And even a bigger nap, i.e. I slept all day Saturday.
