most mushrooms will be just fine when reconstituted. I thin kit's a strain by strain thing and i have never had winecaps dried // a lot of people actually say its best to dry all mushrooms first before you eat them, the toxins that are found naturally in fungi oxidize when allowed to dry making them less toxic /

Thanks. I'll try dehydrating the next batch that I harvest. I'm not picking all that I see, figuring that if I allow them to spawn freely, I'll have Wine Caps for the rest of my life. Just need to be sure that I keep plenty of wood chips available!

Are there any "deformed" ones near them? They look like honey's but I am so unsure of them I avoid the normal ones and go for the deformed ones that make up "shrimp" shrooms.
