My black australorp stopped laying eggs after we gave rooster away

I have three seven month BAs that have been laying for about two months now. Now that the days are shorter, I only get 1-2 eggs a day and had a day last week with none. :( I have one girl who may not have laid in several days, or else her eggs have finally gotten a little bigger to match what the others lay. Everyone looks fine, acts fine, eats, drinks, and poops. I'm just marking it up to shorter days.

Next year, I hope to have three more pullets so that I don't have to ration my eggs.

I have 9 hens that used to lay eggs until I rehomed my rooster. Now I only notice half of them laying. I also noticed a few of them going through molt and winter is coming and they are going to bed a lot earlier. I also moved their nest boxes around. Is this normal behavior because of the things that are happening or is it possibly another reason why they stopped laying?

Yes, that is normal, especially if the hens are going through a molt. It is quite often that a hen will take a break from laying through winter, as the daylight decreases.
