I have heard in general that Polish are very fragile and don't ship well, especially if they're shipped with larger chicks. The dead Polish chick was half the size of the others so I think it just got trampled or suffocated, its head was crammed down in the corner of the box and it was pretty flat.

Ditto! I hate it too, My dad wanted at least one crested breed and it doesn't look like any of the other chicks have one. I might dig around for a few Polish chicks in a local chicken group or I may just stick with my current crew since they're all doing well. Rural King had some breeds I'm interested in too but they have a six chick minimum and that's too many extras for me to take on since I already have four. Wish the minimum was four chicks instead and I'd get some extras, lol.That’s how I found mine.
I have a replacement coming with my next order and there’s one or two more polish with it so maybe I’ll have better luck. Sorry about your loss.
