Keep a close eye out for wry neck. Pretty much anything that's not broad breasted will be heritage. Heritage birds take 24 weeks to reach market weight and are smaller. BBs take 14 weeks and are much larger. The first eight weeks is the hardest with turkeys. Once you get them past 8 weeks they're pretty much indestructible. Spending a lot of time with them will turn them into big feathered dogs.

We might keep a pair for breeding, but the rest will be dinner.
 
Just keep in mind Turkeys are a lot like chickens. I generally try to keep 4 or 5 girls per Tom. If you keep less, then you might want to consider a saddle. A lady on the turkey thread makes them.
