My favorite german recipe!

Scrapple is just what it sounds like, pig scraps, scrapings but its also mostly cornmeal and spices. We make it in in a big iron kettle out in the yard and put it in bread pans, cool it and slice it to fry with a little oil. Its good but knowing its scraps I only eat what my uncle makes. I told my son he needs to help so he learns to make it because its tradition.

Also the stuffed peppers, my grandmother also uses the same mixture to roll up in cooked cabage leaves and top with the tomatoes. I know what its called but i cant spell it.

I have alot of German recipes. I love German sandwich meat. Can't find any around here, tho. When I go visit my mom in Illinois, first thing I do is go to the German deli.
 
My Mother was 1/2 German & used the same recipe for bell pepper also except that she would use 1/2 sausage mised with the hamburger, & pour ketchup or spaghetti sauce on top then cook it. Also she would add more rice than usal roll the meat into meatballs & place them in a frying pan with ketchup. We called them & still do "porcupine meat balls". Eat them plain or in a roll, there never seems to be enough of them
 
Been planning dinners for the week and you just helped cover one night!!! Thanks! Stuffed Peppers are one of my family's favorites. Your recipe is very close to mine but I don't use any egg....just the meat and rice mixture with a few more spices which is wonderful. I haven't made them in quite some time, glad you made me think of them.

I forgot to add that we also use this recipe for stuffing squash even then the big what we call "tug boats" zucchini, the bigger the better, cook in the oven till soft with or without sauce
