Salt pork is good, have you ever tried fried pork/hog jaws? It is in between salt pork and bacon. Not as salty as salt pork but saltier than bacon. My grocery store deli has been frying their own pork skins and OH MY GOSH!!!!!!! I have to avoid walking pass them because I have no control. If my kitchen stayed stocked with pork skins and venison jerky, I would weight 200+++lbs. I have never had a sweet tooth, give me salt, especially fried pork anything.

I prefer hog jowl for seasoning and fried side meat, but will eat fried salt pork in a pinch. It is common on buffets around here; just had some the other day at a country buffet. Limas, fried and BBQ chicken, creamed corn, fried salt pork, cornbread, turnip greens.... not much else!

I was raised a Yankee. Guess I'm converted. Love greens, too.
