Sometimes a pullet will start to crow but your's is definitely a cockerel
Brahmachicken240 picture you see an adult Roos feathering, look close at your first picture, see those "thin" feathers it's the start of saddle feathering. Your second pic (neck) you see again those "thin" feathering, it's the start of hackle feathering.

It appears to be developing saddle feathers which brahmachicken240 has pointed out. I really believe this is going to be a cockerel. If you want to show pics of your pullers we can compare

Usually hens that crow are older. Young chickens that crow are typically young cockerels.
No experience with butchering, sorry

100 % cockerel, and yes he is edible. Allow carcass to age until rigor is gone.
