Does not do possum sorry! DH and his brothers love groundhog and raccoon but but no possum!!!!

So has anyone on here actually caught, cooked, and consumed possum?

And since I'm not a southerner, please tell me: is it opossum or possum or both?
 
My mamaw use to cook possum with sweet potatoes and cornbread. I have never consumed it, but my unle tells me it is really good. Greasy, but good.
 
They say ducks are greasy, so ours are still walking around as free men.

Sweet potatoes and cornbread..... Now I know what I'm having for dinner tonight!
 
I've caught and cooked them. They are greasy. They have layers of fat through the meat unlike most wild critters.

I just skinned 'em out and quartered them, parboiled and then baked them with some bbq sauce. It reminds me of pork. Kind of. It's not weird tasting or anything. Another popular way is to roast it with sweet potatoes.

Take the glands out from under the 'armpits' and back legs. They are little lumps that look like fat but more rounded. (All small game critters have these.)

The hardest part will probably be skinning and cleaning it. They are stinky when whole and they don't get any better when you start taking them apart.

(if that thought grosses you out, just remember pigs are ultra stinky too and most of us eat those without question.)

Are the glands right under the skin or deeper? I don't think skinning it will be an issue with Steve, he seems to like stinky things. I had am skinning rabbits today. He is pretty quick at skinning them. We are feeding it corn and apples right now with plently of fresh water. Anyone know what else to feed it?
I will keep everyone posted until the big event in 2 weeks. I will try to get a picture of Steve and his "friend" tomorrow.
