Just cut out anything that doesn't look like meat from under the 'armpits' Trim away the same fat/connective tissue from the insides of the rear legs too. I'm not even sure you have to, but it was what I was taught and I've always done it that way.

Congrats to you and Steve for catching it and for his bravery for being willing to try cooking it up.

Looks like the have the waterfront covered. I wouldn't do the possum tartare though.....I don't think raw possum meet would be good.

Possum is supposed to be very greasy...Never had any. I found this and this receipe looks good as I love sweet potatoes and dumplings....mmmm may have to find a possum....No no never want to find one. Our dog does eat them...She's a great protector.

After hunting with a lantern in your hand all night, take the possum you have bagged and break his neck by putting your foot on the possum's head and pulling up on his tail. Use boiling water to scald Brother Possum. In a large pan, dress the animal by pulling out those hairs on him. When all is well done, cut Brother Possum into four parts. Add salt and boil the meat until tender. Make your dumplings and add them slowly to the boiling meat. After the possum has boiled about an hour, put the parts into a baking dish. Peel sweet potatoes and slice them thick. Place the slices in the pan around the pieces of possum. Add onions if desired. Bake for 1 hour. This is a Sunday dinner for 12 people with the dumplings. We saw a piece on Bizarre foods with Andrew Zimmer, he was in the mountains of NC and they cooked one on the grill in a pan (like you would do pork BBQ) .I think they just 1/2 it and then pulled the meat off the bones. That would cook the oil out. Or the roasted with sweet potatoes also sounds good. hmmmmmmm maybe we need 2 'possums. lol I quit counting but have trapped probably about 50 in a drainage ditch that runs thru our property.
