Now I Sooooooooooooooo can't wait mine ship on the 15th When you said you use the duck eggs for baking how do you figure it? The recipe calls for 2 large eggs would that be 1 duck egg what about goose eggs

I just use 1 for 1 with duck vs chicken eggs, but then, my chickens lay pretty large eggs too.
This is my first experience with geese, shipped in eggs, so I've never cooked with them, but I'd say they are definitely equivalent to as many as 3 regular eggs.
My friend and I have 8 eggs - total - sitting under her goose right now. They are to hatch around the 17th.
I am so impatient, I want them to hatch NOW!!!
Those goslings look like they aren't going to give you any eggs. If they are pilgrim...I don't see a female in the bunch from what I can observe in the pictures. I got pilgrim goslings this year too, both which turned out to be light beaked, light toned males. Females are darker in color and have dark bills. if their pin feathers---especially those on the back seem light, you will know for sure that you have males.
Thanks for looking. The largest one is definitely a female, she is feathering now in medium and dark grey tones all over. The smallest one is probably male, light bill. Its the middle one that is my "Victor/Victoria" gosling, I'm just not sure. It will all come out in the wash, I'll know in a few weeks tops.
I guess its not as bad as my turkeys, I really didn't know for sure for about 4 1/2 - 5 months.
