Again - how much is a person's health and well-being worth? The neighbors shot AT HER with pellet guns. I realize that may not seem as big of a deal as being shot at with a handgun, rifle or shotgun, but they are just as dangerous.Oh my gosh how terrifying!
I would definitely look over your roosters that were out.
Personally I have some hens that are much louder than our roosters/cockerals(of which we have over 2 dozen if you count the grow out cockerals that will be headed to freezer camp). Fortunately the closest neighbors are 3/4 of a mile away and we live near railroad tracks. Not often used but once you live by that I think you can deal with most noise. We can also barely hear our roosters crows in the house.
I would not get rid of all my roosters unless you were advised to do so by the troopers. As long as you are within the law you have every right to keep them, but I would also put a lock on my coop immediately and if possible put up cameras.
Perhaps if they had come and spoken to you to begin with you could have obliged them and gotten rid of your roosters. However that was not their actions at all. If you wanted to I know someone that lives in town and locks their roosters up at night in the garage as a courtesy to their neighbors.
I'm so sorry this happened to you and be careful. These people are clearly not reasonable people and can obviously be dangerous. They also should have their firearms taken away because anyone who knows anything about guns knows you never point any kind of gun in the direction of anyone. It's incredibly dangerous and stupid. I grew up with a girl that got shot by her brothers friend and had a pellet in her neck for years. Thank God it was just under the skin.
No trespassing signs are also a very good idea.

Locks won't prevent them from shooting into the run or coop, and these don't seem like the type of person who would be stopped by a sign. You can put up "no trespassing" signs along every foot of your property, but that's not going to stop them if they are determined.
