It sounds like she is, as you say, acting like a normal chicken 
You need not worry about her eating the grower pellets, once she has calcium available to her either in crushed eggshell or oyster grit. She is not missing out on anything then and indeed may benefit from the higher protein level of the growers. Many people feed their laying chickens growers or flock raiser as opposed to layer pellets because of the higher protein content and just provide calcium on the side. Perhaps with Silkies habit of 'on again, off again' laying it might be best not to have her on layers all the time (because of calcium in layers pellets) - (I'm speculating here - I'm not familiar with Silkies, just Chickens but I'm assuming this part works the same, hopefully someone will confirm one way or the other for you).
That's another thing, the crushed egg shells you are giving her, they can be placed in a separate feeder/bowl/tub for her. She will take what she needs of those. Amazing little things
