What does hatchery quality mean? I cannot believe that thing is a rooster. Gah. I wonder how he will taste?

Hatchery quality means he is not what a Dark Brahma is, but instead what the hatcheries seemed to create, either with inbreeding, crossbreeding, or simply just unwatched breeding with too vast and varied of stock. Remember, hatcheries breed and sell chickens that lay the most eggs, not ones that look as their breed calls for.

They're about quantity, not quality.

Naturally he should have a solid black chest with white hackles, saddle feathers, and wings coming through, and no white or black leakage on the opposite.

He should look like this but he'll probably continue to have a lot of black on him, with a lot of white "mossiness" on his chest.

The Dark Brahma females are penciled,

so you have a rooster. He should taste fine, but the Brahmas tend to be slower at developing then most breeds, though full sized they are huge.

Interesting. Too bad he won't be one of those chickens that lays the most eggs. Gosh darn it. Another mouth to feed.
