Do you ever make jam with your own honey?

I used a low-sugar pectin this time in my jam, and it set up. The last batch, with regular pectin, didn't. I used honey instead of sugar in both.
I don't use honey in jam. It will change the flavor. The recipes I use produce the desired tastes. No need to mess with a good thing.

I use the low sugar Sure Jell and the full sugar recipe and have never had a failure to set while using it.

I have had failure to set using regular Sure Jell if everything isn't done just right.

The other thing that can be problematic is trying to make a double batch. I stick to the single batch method.
