Need good extra crunchy recipe for fried chicken **UPDATE***

I'll post the recipe later- LOL... It was easy actually.

Okay, so here is FINALLY the recipe... hope no one was holding their breath, lol..

I started with 3 fryers, cut them up, legs/thighs, breasts on bone, wings...

I then rinsed them and placed them in the following brine solution:
4 Cups of Cold Water
3 tbsp sea salt

I left them soak for several hours ( could have done 30 minutes, ok)

I did a seperate bowl with 4 cups water, 1 cup vinegar, 2 tbsp sea salt

I mixed the following in a bowl and placed it on a plate:
2 cup flour
1 tsp popcorn salt (very fine)
1 tsp garlic powder
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp cayenne
a shake or two of sage and thyme

I took the chicken from the brine one at a time, placed it in the flour, put it then in the vinegar solution and dunked it in the flour again (this is how it gets crunchy). I did it for all pieces.

While doing this, I was heating canola oil (use whatever oil you have) in my deep cast iron skillet (which I LOVE). I put them all in on medium and SLOWLY fried them up, moving them to keep crunchy!!

It was delish!!!

If you can skin a deer you can fry chicken, PC. Get to it. Drumstick needs a drumstick.

I found though to get it extra crunchy you have to double dip it, cuz that adds "chunks" of crusty goodness to the chicken...yummie
