Need Help Scalding a Pig for a Pig roast

We cooked the pig for about 10 hours. No foil, kept the fire cool and let it cook slow. It came out just about perfect, wasn't burnt and stayed very moist.

Great!! Glad it turned out... I tried deep frying chickens last year for about 15 people and the thermometer decided to give us incorrect temp. First bird came out black.... nothing more embarassing in front of all your friends.... The others turned out ok though...(just had to wait for oil to cool)...
