Can anyone help us understand why our chickens are laying eggs like this, this is not the first time it's happened.... sometimes there is no shell at all, what are we missing ?

Some things may vary by age, breed genetics, diet, etc, even just a hiccup.. so they may not all be related but get a check of this really cool informative link including the video.. I think your egg currently in question looks possibly most like #6..

Describe the things I mention (age, diet, weather pattern, etc) to see if there may be anything missing.. that we can help detect. Otherwise, hope this is helpful!

Thin shell sometimes mean a hen is not be getting enough calcium (solution: provide a dish of oyster shell free-choice, and most hens will eat the amount they need.)

Lumps of calcium on the surface of the eggshell sometimes mean a hen is eating too much calcium (solution: leave the dish of oyster shell available anyway, and trust that she'll figure it out in time. But if you have been mixing any calcium source into their food to make sure they get enough, don't do that any more.)

Either of those, or both together, can be caused by various glitches as the hen's body is putting the shell on. Glitches either go away on their own, or they don't, but either way there is not much you can do about them. If the problem is some kind of glitch, you cannot fix it by changing how much calcium she eats.
