Need muscovy duck recipes

We have only cooked a couple of ours to date, and just roasted them. The big difference between our ducks and shop bought/restaurant duck is that there no fat on them

they have free roam of the farm and gets tonnes of exercise. This of course means that you need to keep moisture in when cooking to stop them drying out.

I had some leftover cooked meat and made a home made version of Chinese Crispy Duck which was awesome!!

I heated some oil in a baking dish in the oven, shredded the duck and baked it till it was crispy. Then served it with small chinese pancakes from the chinese food store, Hoi Sin sauce, shredded onion & cucumber. YUMMMMMMMMM!!!!!
