She's definitely an EE.

-Highly typical female EE coloring (in fact, the most common)
-Huge beard
-Muffs
-"Grey" (likely slate) feet

EE's can look like anything or lay any color egg... but it is obvious she's an EE. I had a EE once with a straight comb, and one without muffs/beard. They have no standard, but it's plain to see she's a mutt EE.

EEs ARE mutts. Mixed breeds are mutts. There is NO define breed for an EE. Sometimes they either HAVE a beard or not. It is not fully understood WHY EEs are the way they are made. Genetics are difficult unless you want to get an DNA on that bird to verify it had some Araucana blood in them. If OP got her bird from the hatchery as an Ameraucana/Araucana/EE, then it IS an EE.

Sure you can call Ameraucanas EEs because waaaaaaaaay back then, before there was colors to be found, breeders that would WORK on getting consisency in the color, type and get it up to SOP for several generations, it would be an Ameraucana OR if you invented a new color like the Lavenders, it would classify as EEs in a broad term or a mutt UNLESS you want to work HARD, cull HARD to keep that color of Lavender in the Ameraucanas. We are not there yet with consisency for several generations, because there has been some "brassyiness" or yellowish tint going on...once the breeders get that under control and not passed down, then go to shows to promote this color, then by the jury of the peers of the Ameraucana club, either they will accept it or not. Same for APA.

If Op's bird didn't get it from the hatchery, or has NO idea who it was, then we can question it MAY be an EE OR a bearded cross (Silkies or D'Anvers, Favorelles, etc.)

Therefore there is NO standard for EEs. Some of us would like to see pea combs on a wild colored feathered bird laying a white egg, certainly would be a mutt or EE. It took me a while to figure this out and breeders have worked hard and saw their view point in differentate the three breeds, the Araucana, the Ameraucana and the EE (or mutt, some of us would call them as crossbreds). I love the Ameraucanas and EE's but NOT the Araucana (I like a chicken WITH a tail!).

It all boils down how long breeders worked on this breed.

Yep me too I agree she is An EE and a very pretty girl! I have one that looks just like her father Light brahma right down to the yellow feathered legs, and she has a really funky looking comb like a cross between Mom (EE) and Dad (LB) Kinda like a floppy Pea comb , No beard no Muffs either. But she lays the most beautiful Aqua colored Eggs! IF I didn't know and own the parents there is no way I would have guessed this little girl was an EE, before she started laying that is. If your other girl is an EE I would imagine that teryaki would be one too.
