Maybe a silly question, but how do you seal them? I've only ever seen people freeze dry eggs, not dehydrate, but I would LOVE to dehydrate them! Also, could you just vacuum seal excess in a mylar bag for long term, instead of jars?
Not silly at all. To seal in a jar, you would use a canning jar and Lid Only, place the vac sealer attachment for jars securely on top, then follow the vac sealer's instructions. Ours is to press the vac/seal button and the removal of air and sealing of the jar begins. Takes about 1 minute. I add an O2 absorber before I seal.

You can use mylar bags w O2 absorber. Remove as much air as possible before sealing the bag.
 
I have never seen 02 absorbers. Do you find them in the canning section?
I purchased them from Amazon. They are sold in a sealed package. Once the package is opened, they will begin to absorb air. I put the packets in a jar and vac seal it.

They are sold in different sizes: 300cc, 500cc etc. It depends on the size/volume of the jar/bag that you will use.

Ah! I thought I was at the end of the thread when I asked that question and then saw you had already answered that from other people. Sorry, but thank you for explaining again! I just got a jar vacuum sealer, but wasn't sure how well they actually worked, or if they were just gimmicky. Sounds like they're valid!

With some models, people have written that they don't always work. I hold down on the attachment, like pressing down on top of the jar and have not had any problems.
